JIMA OR HARVEST

Seven years of maturity have to happen for our raw material, which is blue agave is top condition to be harvested, then only the best one get selected to be part of El Zacatecano mezcal .

 

KNOWLEDGE

Once the agave is selected and the “pineapples” are ready, they get shipped out from the field to the manufacturing plant or factory where they get process and then under a tight quality control process agave pineapples are cut in to pieces and carried out to the ovens where they cook 8hrs and let stand for 12hrs. 

 

GRINDING AND FERMENTATION

Subsequently the agave is downloaded to the mills. In this process the syrup or honey from the agave gets extracted which thereafter are pumped to large stainless steel vats where fermentation takes place through all-natural process that takes about 72hrs.
