DISTILLERY
In the making El Zacatecano goes by a double distillation process strictly
attach to the NOM (Norma Oficial Mexicana). During the first distillation
process it’s where the heads and the tails (name that it’s given to bad
quality alcohol) get separated, living only the best quality possible that
will go to a second distillery process.
REST
Once the second distillation process is completed, its storage in white oak
barrels imported from Canada for the mezcal to rest for a certain amount of
time depending on the line of product, this way the mezcal gets that
characteristic smell and taste, thanks to the white oak barrels.
BOTTLEING
After the mazcal
has rested, it goes through the bottling and labeling process using the
highest quality standards.
